Ingredients (Serves 6 to 8 people)

  • The Meat Mixture:
    • 2 lbs (900g) Ground Chuck (80/20 lean-to-fat ratio for maximum juiciness)
    • 1/2 cup Onion Pulp (about 1/2 a large yellow onion, grated on a box grater)
    • 1 tbsp Garlic (about 2 large cloves, finely minced)
    • 2 cups Panko Style Breadcrumbs
    • 2 large Eggs
    • 1/2 cup Whole Milk
    • 1 tbsp Kosher Salt
    • 1 tsp Black Pepper
    • 1 tbsp Light Brown Sugar
    • 1 tbsp Mustard Powder (dry mustard)
    • 2 tbsp Ketchup
  • The Tangy Glaze:
    • 1/3 cup Ketchup
    • 1 tbsp Light Brown Sugar
    • 2 tsp Mustard Powder
    • 2 tsp Worcestershire sauce

Step-by-Step Instructions

  • Step 1: Prep the loaf pan mold Lightly coat the inside of a standard loaf pan with non-stick cooking spray. Line the pan with plastic wrap, pressing it firmly into the bottom and corners to smooth out any air bubbles. Preheat your oven to 350°F (175°C).
  • Step 2: Grate the onion and mince garlic Mince your fresh garlic. Peel half a large yellow onion (leaving the root end intact so it holds together) and grate it on the coarse side of a box grater. The resulting onion pulp and juice will blend seamlessly into the meat without leaving raw onion bits.
  • Step 3: Arrange the meat and center well Place your ground chuck into a large mixing bowl. Break up the beef into loose chunks and arrange them around the outer edge of the bowl, leaving a empty well right in the center.
  • Step 4: Layer ingredients and whisk liquids Pour the Panko breadcrumbs, eggs, and whole milk directly into the center well. Sprinkle the onion pulp, minced garlic, salt, pepper, brown sugar, mustard powder, and ketchup along the outer ring over the meat. Use a fork to whisk the eggs and milk together in the center well first.
  • Step 5: Gentle hand mixing Use your hands to gently lift, crumble, and toss the mixture together until incorporated. Do not knead or mash the meat with your fists, or the meatloaf will turn dense and tough.
  • Step 6: Shape, invert, and initial bake Shape the meat into a loose log and press it firmly into your prepared, plastic-lined loaf pan to remove any air pockets. Immediately invert the loaf pan onto a rimmed baking sheet lined with parchment paper or foil, then lift the pan and peel off the plastic wrap. Bake uncovered at 350°F (175°C) for 15 minutes to let the outer crust set.
  • Step 7: Glaze and finish baking While the meatloaf is in the oven, whisk together the glaze ingredients (ketchup, brown sugar, mustard powder, and Worcestershire sauce) in a small bowl. After the first 15 minutes of baking, remove the meatloaf from the oven and brush the glaze generously over the top and all sides. Return to the oven and bake for another 45 to 55 minutes until the internal temperature reaches 160°F (71°C).
  • Step 8: Rest and slice Let the meatloaf rest on the baking sheet for 10 to 15 minutes so the juices redistribute. Use two wide spatulas to transfer it to a cutting board, slice thick, and serve.
