Ingredients (Serves 6 to 8 people)

  • The Beef & Seasonings:
    • 4 lbs (1.8 kg) Beef Chuck Roast (well-marbled)
    • 2-3 tbsp Olive Oil (for searing)
    • Salt and freshly ground Black Pepper (to taste)
    • 1 packet Dry Onion Soup Mix
    • 1 cup Liquid (water, low-sodium beef broth, or Burgundy red wine for extra depth)
  • The Vegetables:
    • 3 whole Carrots (washed and chopped into 2-inch pieces; no need to peel)
    • 1 whole Yellow Onion (chopped)
    • 3 whole Potatoes (Yukon Gold or Red potatoes, peeled and cut into chunks)
    • 1 stalk Celery (finely chopped)

Step-by-Step Instructions

  • Step 1: Season and sear the beef Heat a large skillet over high heat and add the olive oil. Season your chuck roast generously on all sides with salt and black pepper. Place the roast in the hot pan and sear on all sides until deep golden brown. Remove the pan from heat and transfer the roast into your slow cooker liner. (Searing is optional if you're in a rush, but it locks in meat juices and builds crucial flavor!)
  • Step 2: Add soup mix and liquid Sprinkle the packet of dry onion soup mix directly over the seared roast. Pour in 1 cup of water (or substitute beef broth or Burgundy wine for a richer gravy base).
  • Step 3: Prep and layer the vegetables Chop the washed carrots into 2-inch chunks and chop the onion. Add them to the slow cooker around the roast. Peel your Yukon Gold or Red potatoes, cut them into large pieces, and add them in along with the finely chopped celery. (Yukon Gold and Red potatoes hold their shape much better during long cooking times than Russet potatoes).
  • Step 4: Slow cook until fork-tender Cover the slow cooker with its lid and cook on the LOW setting for 8 to 10 hours. Do not rush or shortcut this step on high heat—chuck roast needs the full 8 to 10 hours on low for the tough connective tissues to melt and become completely tender.
  • Step 5: Shred and serve Once done, the beef should pull apart easily with a fork. Plate the tender meat alongside the soft, flavorful carrots and potatoes, ladle the rich cooking juices over top, and serve piping hot!
