    • 1 splash Cloudy Scrumpy Cider (or hard apple cider)
    • 1 heaped tsp English Mustard
    • 2 heaped tbsp Plain Flour
    • 1 Liter (4 cups) Chicken Stock
    • 500g Button Mushrooms (sliced)
    • 2 tbsp Crème Fraîche

Step-by-Step Instructions

  • Step 1: Sear the halved chicken - Cut a whole chicken completely in half down the back and breastbone. Heat a splash of olive oil in a skillet and sear the chicken halves for a few minutes until golden. (This locks in juice and leaves rich chicken fat in the pan for frying veggies later). Remove chicken and save pan drippings.
  • Step 2: Sauté smoky bacon and chunky aromatics - In a large casserole pot over medium heat, fry the smoky bacon lardons in olive oil until crispy. Stir in 1 heaped tsp English mustard and 2 heaped tbsp flour. Pour in 1 liter of chicken stock, then submerge the seared chicken halves into the bubbling sauce. Cover with a lid and simmer gently on low heat for 1 hour until the chicken thigh meat falls off the bone.
  • Step 4: Make the quick flaky pastry dough - In a large bowl, mix 500g plain flour with sea salt. Grate 250g of rock-cold butter straight into the flour. Gently rub the grated butter into the flour with your fingertips until coarse crumbs form. Pour in 100ml cold water and press into two dough balls (2/3 for pie base, 1/3 for top lid). Flatten into discs, wrap, and chill in the fridge.
  • Step 5: Shred chicken and strain the gravy - Remove the chicken from the pot. Stir the 500g sliced button mushrooms into the hot stew. Use two forks to shred all the meat off the chicken bones, discarding bones. Return shredded chicken meat to the pot along with 2 tbsp crème fraîche.   • Step 6: Assemble, seal, and bake - Grease a large pie dish with olive oil. Roll the larger pastry disc between greaseproof paper to 0.5 cm thickness and press into the dish. Fill with the strained chicken filling. Roll out the top pastry lid, place over the filling, crimp edges to seal, and cut a vent slit in the center. Brush with egg wash and bake at 375°F (190°C) for 1 hour on the bottom oven rack until deep golden and bubbling.
